Oatmeal Bread Recipe
(Makes 3 loaves)
Cut into 12 slices per loaf
Each slice: 115 calories
1 cup brown sugar
1/3 cup butter (yes real butter:) )
3 cups boiling water
2 cups regular or quick oats
1 package of yeast
1/2 cup warm water
1 TBSP salt or less
6 cups whole wheat flour
1 1/2 cups all purpose flour
Dissolve the brown sugar and the butter in boiling water and immediately pour over the oats. Let it sit until it gets lukewarm. About half an hour.
Next put yeast in 1/2 cup warm water and stir until dissolved. Add yeast mixture to oatmeal mixture. Beat in salt and three cups of whole wheat flour. You can use a mixer for this part.
Mix remaining flours into oatmeal mixture by hand or with a wood spoon. (take off your rings because it can get sticky) Make sure not to knead it. Place in a covered bowl and let rise for an hour and a half.
Next shape dough into 3 loaves and place into greased loaf pans. I use non stick spray to grease. Cover and let rise until doubled in size which is about an hour.
Bake at 350 degrees for 35 to 40 minutes. Brush top with melted butter if you like. I usually don’t but it does make it a softer crust. Cut each loaf into 12 slices.
(This bread freezes really nicely but usually it doesn’t last long enough to freeze at our house.)
